Angelo cooked this dish for this year’s Poor Seminarian’s Cook-off. It has a sweet twist. It’s fried chicken with ketchup. There’s nothing ordinary about this dish.
-salt & pepper
-Toss the chicken in flour. Season with salt and pepper.
-Pour oil, canola or coconut, into a pan.
-Brown the chicken and set aside.
-Cut up garlic and place into the pan with a pinch of red pepper flakes
-Pour 1 cup of ketchup into the pan and let it brown
-Pour a tsp. of vinegar into the sauce
-Place chicken in the sauce and toss it around
-Serve with rice or quinoa
