Easy Holiday Dessert: Coconut Truffles

In a bowl, mix: 1/2 cup melted butter, 2 cups powdered sugar, 3 cups coconut.  Once combined, form into small round balls and place on wax paper.  Melt 2 cups of chocolate chips (or more if you really like chocolate).  Dip the bottoms of the coconut balls in the chocolate and let sit to harden.  Makes a really easy and low cost (and DELICIOUS!) holiday treat!
